deboning knife

    Looking for opinons or input on a good deboning knife, we have started processing our deer ourselves the last few years and am frustrated with hacking away with kitchen and filet knives we have laying around. Its time I think to reward myself with some quality cutlery.

    I have a 6 inch and 9 inche fillet knife that I love for deboning. I use my Buck knife(can’t find the model) for disassembly of the quarters.

    i got a outdoors edge kit for christmas last year and it works awesome! it has every tool you need! i havent had to sharpen any of the knifes yet!

    My uncle used to sell knives for Kasco. I just bought two of their high end (Forschner) boning knives for $14 each from his former coworker and they are amazing. I highly recommend them.

    I also have a 6″ & 9″, Chicao Cutlery knives that I picked up years ago in a hardware store in Willmar. Quite honestly, if I had to do it again, I would have gotten two 6″. They were not the most expensive or the cheapest, (get the hardwood handles, great grips)I want to say about $30 a knife, which to me 15 years ago was more than I wanted to pay for something I couldn’t even shoot but I will have these for my lifetime

    Just check out butcher supply web sites. You should be able to pick up a decent 6″ boning knife for $15-$30 depending on if you want a plastic or wood handle. The big thing is to also get a steel and keep it sharp. You should touch up the edge 2 or 3 times while butchering a deer. After a while and you can’t get a good edge on it yourself, most meat markets will sharpen it for you for a few bucks. A good knife is a great investment. Might want to pick up a steak cutting knife as well

    Victorinox is what alot of lockers use. I have one and they are great boneing knives. They don’t realy cost that much either. Also if you don’t have one buy a good knife sharpener no matter how good of quality a knife is it will eventualy need sharpened.
