How long do you wait?

    I pickled some spicy garlic green beans last weekend. I don’t have a ton of pickling/canning experience, but had a huge bag of fresh beans from my in-laws so I figured it was a good opportunity to broaden my horizons. Found a recipe online; all went well and all jars sealed – they look awesome, but I’m trying to restrain myself from digging in for a week – which will be up this Saturday.

    I’ve been told they’re good to go after just a couple of days, but I want to give the spices and brine some time to get happy in there.

    How long do you pickle fans out there wait?

    I’m not a spice eater but I’m sure you will have beginner luck they will be awesome. I remember a guy up in Hastings Mn that like hot peppers. He planted over a 100 plants and always said that they don’t look right-sure enough they all were bell pepper. He ended up selling them to a grocery store. Lol

    I let them go for two weeks. There is enough coming out of the garden at this time to keep me distracted while the pickling process works its magic.

    i make about 12-15 qts of pickled green beans a year. i keep them in a frig, no canning/sealing. i add dill, garlic, and tia chili peppers for some zing. i am of the opinion 1 week isnt near long enough.

    i just dug into a jar thats at most a month old and in my opinion they arent there yet. even when i can plain pickles i let them sit at least 4 months!!!!!
