Homemade Hot Sauce Recipes?

    Anyone got a good one?

    Made some with jalapeño last night and it is pretty good but I’m sure there are better out there. Very simple to make.

    10 jalapeño peppers chopped
    1 cup white vinegar
    2 tsp salt
    2 tsp garlic powder

    All ingredients in a pot. Bring to a boil and let boil for 5 mins. Put in blender until liquid consistency. Strain out liquid and dicard pulp. In 2 weeks, strain again with finer strainer.

    Was a good small batch recipe to get a starting point at the very least. Was the first time I tried making hot sauce and got me wondering what you guys do.

    I haven’t done the second straining and probably won’t as I think it has a good consistency the way it is. Heat level is what you would expect from jalapeños. I don’t mind vinegar but it might be too strong for some…it’s similar to Tabasco in that way.

    So, sweetener? Liquid smoke? Something really neat I don’t even know about yet? What do you guys do?

    I’d look into fermenting your peppers. Jalapenos and onions fermented together are 5-star. Googgle “Brad Leone makes hot sauce” for a popular how-to about the method on YouTube.

    I do something similar to what you did Bull. I use several different varieties of red peppers [the red hot varieties] with just the green stem portion nipped off and simmer them in some white vinegar for about 1/2 hour then removed from the heat and allowed to cool in the pan. Next I take the pan with the peppers, a bowl and a sieve, and a food processor out to the patio table. Plug the appliance in, pour the pepper/vinegar mix in the hopper and cover and hit puree for about 20 seconds. Pour the puree thru the sieve into the bowl and push everything that will go thru the sieve into the bowl, discard the rest.

    You can add more vinegar to the pan and pour your puree back in and simmer again if its too thick after whirling it. Check for salt if you like. Add it if you want.

    You can make this as thick or thin as you want and it keeps a loooooong time in a jar in the fridge. Its good stuff as is. Can’t imagine adding sugar as this stuff will fry your taste buds sweet or not.

    For a sweet and Hot sauce:
    2 cups of grilled pineapple
    1 cup of chopped Thai hot peppers
    6-7 cloves of garlic
    2 tbsp lemon juice
    1 tbsp salt
    1 tbsp ground black pepper
    2 cups of white vinegar
    2 tbsp olive oil
    1 sweet onions
    3 tbsp sugar

    Blend all ingredients to create a mash

    This sauce makes a nice sweet and hot sauce/salsa, but if you want something more intense I also do the following to top some hot wings:
    Take 2 cups of sauce and place in a sauce pan
    Cook down until you have a thick syrupy sauce.
    pour to top wings,
    add 1-2 ghost peppers (minced) and toss to coat.

    Doing this method right now. Will be doing this in different batches with a variety of peppers and blending them together in a few weeks, hope to make about a dozen 5oz bottles when I’m all done.
