I am sure Jason or some one will chime in. I have the 797c2si I know when I switched from Lowrance to HB I had to set my sensitivity settings way down compared to my LW. The birds seem to be way over powered. If I remember right my sensitivity usally runs about 2-5 in 2D and 4-6 on the SI and I am still learning down imaging settings yet.

My first guess is also sensitivity. Sounds like you need to bring it down.
In the sonar xpress menu, scroll down to sensitivity and bring it down a few notches.
Regarding temp: it may in fact be reading, but you need to select that information to be displayed.
In the main menu system, go to setup (tab looks like two little tools)
Scroll down to user mode and select advanced.
Then scroll down to select readouts. There, you can change any of the 5 digital readouts along the left side of the display to show anything you want, in any order you want.
