By that I mean taking a gutted fish with the head and skin on and grilling it. I did it 2 times now with snapper (store bought) and it is delicious. Cooking a fish in the skin really traps the moisture in. Has anyone else tried this and maybe has their own technique or recipe?

I do this with trout and salmon, add a little butter and lemon and you are good to go!

I like the little cohos we get here on lake MI in the spring. 2-3#. Scale, cut the fins, belly, head, and gut out. 1/2 stick of butter and chopped onions with a healthy amount of cajun seasoning. Wrap in aluminum foil and on the grill. When they are just about done (20ish minutes), I remove from foil and set them on each side on the grill for a few minutes. Good eat’n

I’ll also do fillets laid on alluminum foil and use all cherry wood. Lifting the cover just enough to give the wood some air to burn….then let’m smoke

When we vacationed in Pensacola a couple winters ago I had a grilled snapper dinner and I don’t think I have had fish as good as that since. The fish was unreal.

Fill the fish with chopped onions, tomatoes, parsley, and butter. Wrap in tinfoil and bury in coals.

I grilled some Northern fillets the other night that turned out pretty good. Weaved them onto a skewer with bacon. Sprayed cooking spray on the grill, put the meat right onto the grill. The meat didn’t stick, the bacon didn’t cause too much of a grease fire problem. It was quite good! Definitely something I will do again when craving fish and also wanting to grill!

Yup. Way better. I should edit my comment about being the best since then to say its the best right after crappies. Sunfish are down the ladder a ways….about with suckers and walleye.

Right. They’re right up there with sunfish guys. Or should I say down there since they both are bottom feeders.
