Grilled Salmon

    ….and pineapple slices was dinner tonight. Brushed the flesh side of a three pound fillet with olive oil and sprinkled it with lemon pepper. The fillet was slid onto a sheet of foil skin side down and placed on the grill. Pineapple slices were put around the edges of the foil. The cover went on the grill and was left undisturbed for 18 minutes then the fish, pineapple and foil were all slipped off and onto a plate to serve. Using a spatula the fish came right off the skin. The pineapple sweetens up nicely when grilled like this and the browned edges are succulent.

    Served with a big ol baked spud this was a dinner to die for. Maybe a little high in the calorie department but also high in omega three fatty acids to help fight the bad cholesterol. Actually grilled salmon is one of the healthiest fish one can eat and I can eat health like this several more times thanks to out little trek.

    Did you eat the skin? Can’t say I do it every time, but well seasoned and crispy salmon skin can be very good.

    Cooked the way I do on the grill the gray fat under the skin cooks to the skin and slips off the flesh when serving. The skin stays right on the foil, so no I don’ eat the skin.

    As delicious as that sounds, it didn’t happen unless we see a picture. By the way my mouth is watering like crazy right now…

    Skin is the best part.

    Oh and when I’m salmon fishing, I skin them and take the cheeks out before I release them. whistling

    I eat salmon once a week and that sounds good with the pineapple. My simple go-to recipe is salt, pepper, and mustard seed!

    Oh, glazed maple syrup salmon is delicious also.

    I eat salmon once a week and that sounds good with the pineapple.

    Cut a fresh pineapple’s skin , crown and bottom off, then slice the fruit into 1/2″ slices and lay directly on the grill. When the bottom edges are getting pretty dark flip the slices over. Then baste the tops with that maple syrup! We’ve done pineapple this way too and its great.

    Carle and I will eat up to two/three fresh pineapples a week….love the stuff and it goes with just about anything. We grill a lot this time of the year and if the grill is fired up its very likely pineapple will be on it.
