If you are close to or going by a Super One they have whole porkbutts for $1.29 a pound. They will be on sale until next Saturday the 9th. At that price I plan on picking up 2 just for dogs and brats.

How do you go about making brats? What recipe/process do you do? Thanks!

Wish I lived by a super one. I need a few pork butts for venison brats.

I use Curlys seasonings and just grind the pork butt and let it sit overnight. The next day I stuff them and cold smoke. I add pink cure because of the cold smoking. My favorite are the Old Fashion hot dogs and the Polish. I stuff them into brat size casings. I really don’t care much for actual Brats but prefer the spice of the old fashion and polish.

I tried to get a link to his website and I guess he has retired. The next best guess would be P & S seasonings. I had heard rumors the Curlys was just repackaged P & S seasonings but don’t know for sure.

I use P S seasonings there great. I really like the hot italian sausage mix. But when mixing it calls for 50 lbs of pork per pack. Comes out a little weak, 30 of pork to one pack of seasonings. And it’s perfect then.
