Gluten Free Batter?

    Frying some eyes for some friends this weekend and my buddy’s wife has a gluten allergy. Don’t know much about that but anyone know about a gluten free batter? Is there such a thing and if there is, can I still fry them?

    I could always do a 7-Up boil if needed I guess?

    There is a Zatarain’s breading mix that is gluten free that I’ve bought at Walmart.

    My wife is gluten free I dont use a typical batter anymore. Get instant mashed potatoes. I like the 3 cheese or sour cream and chive. Just do a basic egg wash and coat with the potatoes. I have been doing this in the boundary waters as well and my buddies all love it

    corn meal, salt and pepper to taste.
    your favorite chip, crushed to powder.
    alternate filets and your favorite bell pepper sliced up, and a chunk of butter, wrap in tin foil and place on the grill.
    bread crumbs is also another alternative, gluten free of course.

    My wife and a daughter are Gluten free. We also do the instant potato flakes mixed with parmesan cheese. I use an egg wash first, then fry.
    This has been their favorite of the many GF recipes we’ve tried.

    Just remember to do the GF first. You’ll cross contaminate if you do a normal batter first.

    Girlfriend is GF. Tony Cachere’s, Zatarains, Louisiana, and many, many others are. If it’s cornmeal based it is GF. They all make mean mixes, there is no quality decrease with GF. Just have to read the label.

    Sorry to piggy back, but with most washes being with egg. What can a guy do for a person who is GF and has an egg and dairy allergy?? No mayonnaise either.. It’s my wife’s coworker and she wants me to cook up some fish for her, she certainly is needy..

    You can still do the potatoes. Rinse filet do not pat dry instead of shaking in bag put potatoes on a cutting board and press fillet into potatoes. Both sides and fry. Doesn’t work as good and oil gets dirty quicker but it works. This is how we do it in Bwca as we never bring eggs

    Most of the batters we use don’t require eggs or milk. Many of the GF options above are just like that. Dampen the filets, throw in a bag, shake.

    I agree they tend to fry better with milk but you don’t need it.

    Kentucky Kernal gluten free Seasoned Flour. Good stuff. You could use for a wet batter or just shake the fish in it, dry breading style. I do suggest an egg bath and perhaps double coat since this is finely ground. It does make good fish and chicken! You can always doctor up if you like cajun. Otherwise, corn meal based breading.

    Kentucky Kernel is another good one ^. Usually just pour mix in a ziploc, chunk filets, toss, and fry. Could use Franks Red Hot or similar sauce in place of milk.

    Soak in Frank’s then roll or shake up chunks in A gluten free mix. My brother needs gluten free and dairy free. His homemade mix is rice flour, baking soda, S&P, egg whites, and gluten free beer.

    Toss in Frank’s hot sauce or nothing at all and shake fish in a bag of seasoned cornstarch and/or cornmeal. Super crispy.

    FYI,

    I ended up using the same Bisquick batter I usually do, but the gluten free version.

    I didn’t like it as much as the regular stuff but it was still good. All of my buddies didn’t seem to know any better and ate it up, so there is that.

    Think I’ll stick to the gluten heavy stuff until a need arises to go back.

    Just read a recipe, that was G free, they used Tapioca flour and cornmeal-no egg.

    Corn meal is fine. Plenty of southern catfish fried in corn meal.

    Crappies and walleyes fried (without batter or flour dusting) in pan with a light layer of fresh butter (don’t scorch it), touch of seasoning salt, pepper and fresh lemon. Yum.
