Blackened Walleye

    Let’s just be honest; Living in “Borderland” doesn’t mean your diet simply consists of Grouse, Ducks and Venison…….We eat Walleye as well.

    For any of you guys or gals looking to try something a bit different, I thought I’d share something I’ve enjoyed. Blackened Walleye. What I do is start burning down some Onions, Green Peppers and Mushrooms. As these veggies are nearly cooked to perfection I throw in some tomatoes and then mix in a bit of taco sauce. Salt and pepper to your particular taste. Remove Veggies and place on your plate.

    Then I crank up the heat on that pan and add a little Olive oil. I like to coat my fillets with a whole range of seasonings or as simple as salt and pepper. Remember to get that pan HOT!! Burn each side down for about a minute depending on your pan temperature. Then place the Fish on top of your cooked veggies. Pretty darn tastey and also a pretty healthy alternative to fried fish.

    It’s still cool to eat fish!!

    i did this up at URL and my 8yo said “Oh, daddy, do we HAVE to have mexican walleye AGAIN”!!

    But she did eat it…

    I’ll give ya that Stu…..It does have a certain Mexican style flare to the dish. I happen to like the mix of onions, peppers and even some taco sauce to blend the flavors with some fresh Walleye. Some would choose to make this a HOT spicy meal. Black pepper is a bit hot for my mouth.

    that was my trick: i did NOT add hot spices (red pepper flakes)to the recipe. Simple tomatoe is enuf for her. Add onions and she is at her limit…

    But, without the hot pepper she ate a whole filet…

    X2 on the blackened walleye. One of my favorites and literally the easiest way to prepare fresh fish. I do mine differently but same result.

    How do you do prepare yours?? Always looking for a new way to prepare the best tasting freshwater fish in the world! I am NOT a chef!! LOL!!

    -Butter both sides of a fillet
    -liberally coat buttered fillet with Zatarains Blackened Seasoning
    -Place in smoking hot cast iron skillet for about 45 seconds on each side.

    That’s it, too fast & easy. Zatarains is for us folks that dig the spicy heat though.
