    looking for a breading receipe for walleye and crappie.
    I really like the Lily River Breading, but are local Sportmans Warehouse is out at this time. Anyone out there with a good one would be appreciated. Thanks in advance!

    Go get yourself a box of Ritz crackers and fine grind them in a cuisineart… then add any seasonings you like!!! That simple!!! I add pepper and dip in egg wash and then the cracker mixture and off to the fryer, serve with quartered lemons, tartar, what ever you want. I also use this recipe for frying pheasant breast and other yummy things!!!

    Try this – works best with crappie/sunfish fillets:

    Preheat the oven to 500 degrees. Yes, 500 degrees.

    Cover a cookie sheet with fresh (soft) bread crumbs.

    Smash about 2 cups of your favorite chips (sour cream & onion or BBQ work really well)

    mix about a cup of parm. cheese into the chip crumbs.

    dredge the fillets in milk, then coat w/ chip breading.

    place fillets onto bread crumbs and bake until they flake easily (about 5-7 minutes)

    The bread crumbs are sacrificial…they stick to the fish, but keep the fish from sticking to the pan.

    Crisp, yummy and not dripping with grease.

    I usually mix corn meal, corn flake crumbs and fry magic together – sorry, I just eyeball it and don’t measure things in the kitchen.

    I also mix some Parmesan cheese or Cajun seasonings into this depending on what I feel like.

    Dip into an egg wash or milk and fry in a shallow pan with a little oil.

    I crush up (keebler club crackers)it gives your walleye fillets a golden brown buttery coating, dip the fillet in egg wash first,deep fry, um um good!!

    Try finely crushed cheez-its for something different! Egg wash and fry. Simple and tasty.

    I just dust the fillets with a combo of Shore Lunch and cornmeal or Hushpuppy mix w/onion. Fry. Cornmeal adds crispness and browns easily.

    Try using “Potatoe Buds” instead of crackers;

    Rinse filets
    flower
    egg wash
    Dip/cover in Potatoe Buds
    Fry in hot oil

    Has a “potatoe chip” flavor and cooks up nice and crisp if oil is hot to begin with. If you put a drop of water in the oil and it pops…oil is hot enough. Really good with Garlic Salt as seasoning

    Dredge in Shorelunch and pan fry in butter till golden brown and crispy. Squeeze a few drops of lemon juice on the fillets – don’t get much better. Only wish it was summer so I could have a side of fresh creamed peas and new potatoes with it……

    What’s with all this oil crap???? Yuck…..

    Try regular stick pretzels processed in a blender or food processor to a course grind. Dip fillets in egg wash and roll in pretzel. Pan fry in hot oil. You can add extra seasoning but it is not necessary.

    I have a couple I use.

    Basic white flour
    egg/milk wash
    salt and pepper

    or

    3/4 Fryin Magic, 1/4 flour
    pepper
    milk/egg wash

    Heat oil till its very hot and drop pieces in till desired doness, I like them a bit on the cripsy side.
