clean thoroughly in lightly salted water.

    Strip them out into slices

    dip in beaten egg

    dredge in cracker crumbs

    fry in butter or oil

butter is better, but it’s your body

    lightly salt and pepper

    cook until brown.

IMO the best way is rolled in flower, fried in butter, salt to taste. Don’t ruin these with any kind of sauce. they have plenty of flavor. Trust me, you just keep eating them over and over and over again. They are just that good. Another decent way to cook them is roll in cornmeal and fry in butter. Either way, they are morels and they are delcious. I have never eaten them with any other food. they are great just by themselves!!

I just found a sack last night, big ones! I like the ones like Todd had posted. I also have a take on a steak topper. chunk mushrooms add to melted butter over med. heat, keep cook’n till moisture has cooked off, add salt, pepper, a few shakes (tablespoons) of steak sauce, and 1 pint of heavy whipping cream. Keeep stiring till thick and pour over your steak, you’ll never get rid of the in-laws after you make that up!

Just came back from the woods and i found about 2 pounds. Thier all still fresh and none are drying yet so theres about 2 weeks left as far as i see it. Down here thier getting them in places you don’t regularly find them, its an awsome year this year. Pat dry, Dip in egg, roll in flour and fry slowly in butter over low heat until crisp.

Just did a batch here at work…boy were the guys hungry !
Tried a new way over the weekend
roll a shroon in a 1/2 strip of bacon and hold in place with a wooden toothpick, place in the broiler and be sure to watch em, when the bacon looks to be 1/2 done, flip them over. when done and still warm, sprinkle a little bit of brown sugar over the top…not too much, just a bit. These went over big with the guys just before omlets made with morels, onion and green peppers.

I prepare morels much the same as you do by rolling them in flour and frying them in butter until they are golden brown and crispy on the outside. I do however add a few secret ingredients to the flour mix that make them even better. I know 2 people who loved to hunt mushrooms but never liked eating them because their parents always just fried them in oil without any batter or coating. Mushrooms cooked like that are pretty much slimy in my opinion. I fried up some my way for these guys and now they absolutely love to eat them. I didn’t find many in my backyard this spring (only about 30 small greys) but found a few hunderd over the past few years. The dead elms have been gone from my backyard now for 2 years so I’m thinking this is more than likely the last year I will find any back there. Next year I’ll have to raid my neighbor’s yard as they have 2 smaller elm trees that are both dead or dying.

Another good way to eat morels is to dice them up, fry them in butter and then cook them up with a batch of scrambled eggs. Just make sure that you drain the mushrooms before adding them to the eggs or they will turn your eggs grey.

I have this recipe I make in the fall and winter using canned morels, but a friend asked how to make it with fresh and I came up with this. Pack cleaned and sliced morels in a pint jar and add water to the top, do 2 jars, pour in a sauce pan and bring to a boil for 10 minutes. Use in place of canned mushrooms. Here’s the Alfredo recipe, it is VERY popular at the ice outings I go to.

    Morel Mushroom alfredo

    2 Tbs.- cooking oil

    1small – onion

2 pints – canned morel mushrooms

    1 carton – whipping cream

    Seasoned salt to taste.

1 pakage – grated 5 cheese from kraft

    1 pakage linguine

    Cook linguine acording to pakage.

In a deep frying pan saute onion in oil until tender, add 2 pints of mushrooms, including liquid, bring to a boil, add whipping cream and stir in, let simmer for about 3 min. add whole pakage of cheese and stir till melted.

Pour over strained noodles and mix. Add some cracked pepper from a mill to taste.

    Enjoy. Any questions PM me.

    Ed
