Alright I know that they’re one of the ugliest fish God has ever made but WOW! I must admit that eelpout is one, if not the best freshwater fish I’ve ever ate in my life! I’ll be the guy chasing eagles off ellpout on the ice and taking them home. I’ll now feed the eagles Walleyes.

How did you clean them and did you just eat the “Backstrap?”

The backstrap is all I took out of the eelpout. I just cleaned like I was cutting the backstrap out of a deer. Down the back bone and then along the top of the ribs and it peels right out. Then just fillet the skin off and cut it into cubes and boil them until they float. (it only takes about 4 min) then dip into butter. We also had them breaded in shore lunch. After the boiling roll them in shore lunch or flour and cook in butter or deep fry. All of these were good but I liked them just boiled. During the family fish fry my sister ate most of it (without knowing it was eelpout) and she couldn’t stop saying how good it was. If she likes it then I know I could serve it to anyone and they’d like it. My Brother in law said she still doesn’t believe him that it was that “Ugly” fish I was cleaning.

Good stuff! Don’t be afraid of the tail meat behind the rib/belly area. There is some dark meat that you want to cut out, but the rest is good.
