Bisquick and EggBeaters. Thin down a bit with beer (I prefer Leinie’s Dark) and spice with a Cajun mix. The batter needs to be pretty thin because it ‘puffs’ up a lot. Dry the filet (I cut them into chunks), dip in batter, and drop in deep fryer (375 degrees – peanut oil works best but I also like saffron or sunflower oil). Turn once and remove/drain when golden brown. Definitely my favorite batter… I also like to do the dry-wet-dry (coat fillets in flour, then dip in egg/milk, then coat again in spiced flour).
