Right on; keeping the temp at 350 or less makes for a much better fish. Much too often, especially in the deep fryer I tended to overcook, but my cast iron frying pan works great.
One simple receiple that my kids love goes like this:
4 cups of pretzels
2 Eggs, beaten
1 5oz can of evaporated milk
6 oz of beer or club soda
2.25 pounds of walleye
Veggie Oil
Lemon Wedges
Crush pretzels, mix eggs, beer, milk and coat with pretzels Cook until golden brown, drin on paper towel and serve with lemon wedges.
Sad to say but the best receipe I ever had for Beer Batter walleye I can no longer remember. However, it did involve much of the above including the evaporated milk, but also included adding baking soda and paprika.
