Ideas for a lunch for a group

    We’re hosting a lunch for some family (20 or so) after our daughter’s baptism next weekend, and I am drawing a blank for a meal plan. Looking for something that can be mostly prepped beforehand, as the baptism is after 10 am mass, so it will be nearly noon before we get home.

    For our son’s baptism, we did tacos. It worked out really well, but I’d like to not repeat. Any flashes of brilliance?

    Shredded beef or pork? Most meat lockers sell it if you don’t want to prepare it yourself. With your unsafe oven I would probably buy it.

    On those occasions we would do pot luck and sliced ham sandwiches using some type of bun.

    Some sort of jello salad and you are good to go.

    2nd the pulled pork option. Throw a big ol’ pork roast in slow cooker with onions, peppers, and spices. Cook it in a 1/3 mixture of beer, orange juice, and soy sauce. Shred it up once done .. Serve it in tacos and sangwiiiiches both. Make some pico for tacos on fresh corn tortillas. Some. BBQ aside for sammiches. A nice side of slaw goes with both perfectly.

    I don’t know how far you from Hampton MN, but Greg’s Meats does a couple of meat “things” for a heat and eat. Pulled pork and or beef (I think), and they have all the fixins to go with.800-657-4973

    Turkey and dressing sandwiches cheese plate, chips and some soda or water. That’s how my family does it.

    Chili > use ground turkey instead of beef, and make one chicken(you can use canned) medium or less on the spice, have some rolls and crackers and shredded cheese around. Case or two of bottled H2O and maybe coffee or a fruit punch drink (and beer if that’s the crowd favorite) And then maybe a bowl of fresh fruit. Use the Crock Pots and disposable cups and bowls, (plastic china and utensils) Hope this helps > it’s different and not that tough to pull off….

    Beef brisket from Sam’s club in a big slow cooker with hard rolls can’t be beat! Vacuum packed and pre-cooked.

    The classic basement church lunch

    Sandwiches on Kings HI Buns
    Fruit Salad
    Pasta Salad
    Cookies, brownies and lemon bars
    Coffee and Fruit Punch.

    All served on paper plates and plastic

    (Bloody Mary and Screwdrivers for you best friends)

    My top group meal not much work

    chicken phillys

    cut up a bunch of boneless skinless chicken breasts night before small pieces size you’d want in a sandwhich
    cut up green peppers and onions
    throw everything in crockpot in morning
    pour in can or cans of vegetable broth
    pour in envelope or envelopes of italian dressing/seasoning depending on how much food
    cook 3-4 hrs on high or 7 hours on low
    cut up french bread bake in oven for 10 minutes and let everyone dish up their sandwhiches.

    musky cheeks are always good for big groups.

    Pulled Pork or pastas are my go-to. You can make a couple of 9×13 pans of lasagne pretty easy ahead of time and do nothing during the party.

    Well, I have decided to go with a combo of pulled pork sandwiches and sliced ham sandwiches along with cole slaw and a few other sides. I’ve got a bit pork butt sitting in the fridge letting the dry rub do its thing.

    I thought about having Q Fanatic cater. Way better than Famous Dave’s. I’m no stranger to the kitchen. It’ll turn out well.
