Egg plant anyone?

    I seem to have a pile of eggplant growing in the garden. Ive never eaten any and I’m not sure if I want to try. If you’re in the area you can have some. I may be interested in trying a recipe if you have a good one…

    Wish you were a little closer, egg plant is one of the finest eating veggies in the garden.

    Slice up about 1/2 inch thick. Salt well and let it sit in a collander for a couple hours to drain. Egg wash and bread in bread crumbs with itialian seasoning. Pan fry and serve with marinara sauce and parmesian cheese.

    Also if you like mediterranian food-google Baba Ganoush.

    First time I grew eggplants this year. Below is what we have been doing with them. The last 2 are going into a eggplant soup but I will not post that recipe until I know who it turns out.

    small eggplant
    1 beaten egg
    ½ c Italian bread crumbs
    2 tbsp cooking oil
    1/3 cup parmesan cheese
    1 c shredded mozzarella cheese
    Spaghetti sauce

    Peel eggplant and cut into ½ inch think slices
    Dip eggplant into egg then into bread crumbs
    In large skillet cook eggplant in hot oil for 4-6 minutes till golden brown. Turning once.

    Drain on paper towels.
    Preheat oven to 400
    Place eggplant slices in a single layer. In a baking dish. Sprinkle with parmesan cheese. Top with Spaghetti sauce and mozzarella

    Bake 10-12 minutes or till hot

    I LOVE eggplant. Definitely peel it before you cook it.

    Cut into 1/2″ slices, dip in egg, then flour to fry using a generous amount of salt to season it. Goes great with Italian food, steak, ribs, etc.

    I do the egg wash thing but I use seasoned cracker crumbs to bread mine and brown. Then I layer in a baking dish using pasta sauce to cover and a layer of onions and shredded cheese of your choice. My family loved it. Try it you will like it

    Thanks guys. Sounds like you treat it like zucchini? I like anything fried so I’ll give it a try. Maybe in spagetti or lasagna.
