Why is it some fish have the yellow/golden ring around the black part, but some of the same species wont have the yellow/golden ring, it will be all black? Is this have something to do with age or how deep the fish was ccompared to the other fish? Is it a light adjustment thing? Thanks in advance.

Maybe its the same reason we have different clored eyes. Simply the way they were born.

If I can recall my biology of fishes correctly I believe it’s just the variation of melanin in the iris, which can vary from the yellowish color to black. It wouldn’t have anything to do with light levels as the vast majority of teleosts (including the fish you mentioned) don’t have adjustable irises like our eyes have. Elasmobranchs (sharks, skates and rays) can adjust the size of the iris, but it takes much longer than our eyes.
