cooler sweetcorn

    Just got an e-mail from my neighbor and it told of a new way to cook sweetcorn. It showed a standard cooler with 2 dozen ears of corn in it and they poured 2 kettles of boiling water into cooler, over the sweetcorn. It said it takes 1/2 hr. too cook and holds its flavor for 2 hrs after. If in need this is the way too cook alot of sweetcorn.

    Had some cooler corn at a 4th of july party last weekend. It was good but still not as good as grilling or throwing them in the fire. Very quick way to cook a lot of corn. Might not be the best to us the same cooler your minnows where in the week before.

    My cousin showed me his rig to steam corn and we use it every year at the family reunion. A galvanized ash can with lid from Fleet Farm. It’s about 8 gal size. You need to solder the bottom crimp seam on the can so it holds water. Make a little 2×4 rack to sit in the bottom to keep corn out of the water. Add water a couple inches deep and pack it full of corn and lock the lid on. Can usually get close to 3 dozen. Put it on your propane fish cooker burner get her boiling. 15 min of steam and your good to go. We stack the cooked corn in a cooler and it stays hot for hours. He made a butter dipper from 4″ stainless pipe. Getting to be the season.

    Back when I worked for Twin City Catering, we would work plenty of picnics where sweet corn was served in large quantities. To keep it warm after cooking in the large pots, we would put it in 48 quart coolers, with some hot water in the bottom. If you aren’t feeding 5000, you can use a smaller cooler, and let everybody savor that fresh cooked flavor!

    Consider yourself lucky. I would be surprised if we even got any down here this year that was locally grown. Our corn looks like its just about a total loss. Getting brown fast. Hard to grow corn when it doesn’t rain for 6 weeks and the temps top 90 half the time.

    I hear ya… thank god for irrigation around here or I probably would be eating texas corn all summer too

    Our field corn on the north side of the twin cites is about as tall as I am now. Sure hope the sweet corn is going about the same way.
