    I recieved an associates degree in culinary arts from the Louisiana Culinary Institute. Then I worked under a chef for 8 months at one of the best restaurants in the city.

    Iam currently enrolled at Anoka Tech and getting an associates in Supervisory/Management. I’m half way done. A good chef needs to know how to lead and manage people.

    My goal is to land a job at a highend resort in northern minnesota or even wisconsin. I wouldnt mind driving launch again on mille lacs and land a chef job up there.

    I worked for John Besh at August and my internship was at Commander’s Palace. I know the industry involves alot of booze but I have built up a strong program to deal with it. I cant take or leave it.

    Jambalaya, Craw fish etouffee, gumbo, dirty rice with andouille sausage. Shrimp and grits. Frog legs, crab cakes. And the holy trinity, green pepper,onion and celery. My favorite is crab stuffed shrimp and frog legs. You can get 20 count shrimp for $4 along the highway. The two hardest meats to cook are steaks and fish and I mastered that. They treat their food and LSU like a religion. It truly was an awesome experience. Our kitchen thermometer read 115 during the months of July and August. And we wore long sleeves and long pants.
