Whats your favorite pickled sucker recipe

    Went up on a river today that had alot of shallow water suckers in it befor the ice thawed and pushed them out and into the deeper holes this last week. Was kinda disapointed to find there was none at all like last weekend when i seen a couple hundered that i could have speared. I brought my canning pressure cooker, pint jars and not a fish to be found for canning. For anyone that likes pickled fish and can make your own heres my recipe,,, One tablespoon each of ketchup and yellow mustard, 1/2 teaspoon of pickling spices of your choice, 1 teaspoon of ocean salt and a half teaspoon of apple cider vinegar. I mix in small diced yellow onions too. Mix all the ingrediants in bowl for the amount of pint jars your going to fill. Seperately bring to a boil some water to fill the pint jars after you’ve filled them with cut up sucker chunks. I put the ingrediants in the jar then fill with cut up suckers then fill the rest of the way with boiling water. Then i put the lids on and pressure cook for 20 minutes at 15 pounds. The first time i ate suckers fixed this way with crackers the guy had to take the jar from me because i was going to clean the jar up, pretty good fish for eating during the winter infront of the t.v. Hopefully the suckers with come back into shallow water befor it ices up again. I won’t miss next years sucker canning in late november.

    I prepare salmon in a similar fashion using salt, pepper, vinegar and ketchup, no pickling spices. 12 pound pressure and 75 minutes for pints, 90 for quarts.
    Comes out with the consistancy of tuna but with a much better taste.
    I have prepared salmon over 25 pounds in this manner and never I have never had a bone remain after the cooking. I intend to try it with northern this winter.

    I think my FAVORITE recipe is anything that DOESNT include carp!!! lol

    Its just starting to go here on the Turkey river, haven’t been there yet at $3.89 a gallon until I get my little 2.5 S-10 running, short in the wireing problem.
