    Rochester’s HyVee Barlows has pork shoulder on sale at $.99/pd. Not certain for how long or if its just at that store. I just picked up 3 10 pounders for the freezer..

    I’ve used this pork in the past. One thing I’ve noticed it is very lean pork. I’ve been buying my pork by the case labeled pork trimmings as of late. It tends to have more fat than the pork shoulders, but not so much fat to make it unusable. It still has a fair amount of pork meat in it. Last year I paid around $1.20 #. 60# a case. The 20 cents a pound more to me cannot justify me cutting it off the bone and throwing the bone away like has to be done with the pork shoulders.

    That’s just me and how I deal with my pork for sausage. It all turns out good in the end. 99 cents a pound is a good deal.

    Last year I cured and smoked a couple of these same pork shoulders that hyvee is offering. Now that is some very good eating!

    As I bone the shoulders I keep the bones in a bag in the freezer. When I have 5 or 6 pounds of the bones I thaw them and put them in an open roaster and bake for three hours or so at 325, no water added. When I take that pan from the over I add three quarts of water and a little salt and cover it, set it on a stove burner and simmer the bones for about two hours, then strain saving the broth it makes. This makes the best darned gravy a guy can make. Those bones don’t bother me in the least.
