Here’s a recipe from my friend.
These things were awesome!
This is a made up recipe…so keep that in mind.
Need:
round toothpicks
Pkg deer chops
Panko
Pesto
Prosciutto or thin deli ham
Spike seasoning
1 pickle cut into little spears
Soak toothpicks in water.
I used a pkg of the deer chops. Cut into ¼” thick pieces that were about 2”X3” (or however big your chops are). Pound down on each side to flatten.
Spread one side with pesto (I get mine at COSTCO, very good deal there).
Place a piece of prosciutto or thin sliced deli ham (the same size as the deer medallion) on top of the pesto.
Place a sliver of pickle on one end of the meats, then roll up.
Cover with Panko (Japanese style bread crumbs. You can find this at Cub) and Spike (seasoning also found at Cub) mixture.
Broil for about 3-4 min. Turn, broil another 3-4
