    Mom’s Chili

Before we even get into a “My Dad can beat up your Dad” discussion just let me tell you….My Mom’s Chili will kick your Chili’s butt

Ingredients needed, pay attention to notes for mild or hot Chili.

    Spices –

Grill Steak Seasoning – I like McCormick’s Montreal
    Garlic powder
Towes – Garlic & Herb. If not the brand “Towes” make sure your garlic herb splice includes Paparika and Red Pepper.
    Accent
    Mrs Dash
    Ground pepper
    Salt

    Now for the other fixin’s

1-2 Large Chopped onions…if you like onions for sure 2
    1 head of diced garlic
1-2 Chopped Green or Red Bell Peppers
    6 Stalks of Chopped Celery
2-3 Chopped Challots…..I love challots which are between a garlic and onion.

If your chili pot is like mine and may stick a bit….coat pot lightly with Olive oil.
Add your chopped goods and start to simmer, do not get pot too hot. We started off with a medium heat to get thing going but backed off as we added the rest.
Before the chopped goods are cooked soft add 2lbs of Lean Ground Round (if you use hamburger brown it first and drain grease) stir and add seasonings to your liking. You could easily start with a ¼ to ½ a tea spoon each.

Start adding the rest of this list below to the pot while just keeping hot enough to simmer.

    8oz sliced Mushrooms
28oz can Hunt’s crushed Basil Tomatoes, you can even throw in a few of your frozen/canned garden tomatoes along with.
15oz can of Roma style tomatoes (with Italian herb sauce)
10oz Can of Rotel Hot (Diced tomatoes with Habaneros) for extra heat drop in a couple chopped Habaneros.
2 15oz cans of Light Red Kidney Beans, do not drain. If you like the heat instead of the Light Red beans use Hot Chili Beans, do not drain.
    Salt and pepper to taste.
Once you have everything at a simmer add a small hand full of Brown Sugar, Approx ¼ cup to blend flavors.

Last but not least…start adding Chili Powder a little at a time until you have hit your desired flavor/heat level.

Serve in bowl with provided toppings….Shredded cheese, Diced onion, Oyster Crackers or smashed Doritos.

On a cold day if the smell escapes the house be ready for the neighbors to drop by.

For desert, take 2 Beano and eat a bowl of ice cream

Thanks Mom for making the trip from Florida, it was a hoot making Chili with you

I thank the good Lord every day for my parents
