I would like to make the slim-jim size venison stick sausage or beer brats. I tend to like spicier foods although the wife doesn’t but I can modify the recipe accordingly. I have a LEM sausage stuffer and a smoker. I have tried a couple recipes I found on the net but they were very DRY.
