Grilled Duck Breast

    Boned Duck breast fillets-sliced into 3 strips per side

    Sliced Onion

    Sliced sweet peppers/Red-Yellow-Orage

    Sliced Portabella Mushroom Caps (optional)recomended

    Bacon strips

    Marinade Suace:(Amount depends on how many strips you cook, should be equal parts of each)

    1/3 cup apricot jam

    1/3 cup olive oil

    1/3 cup whiskey- your choice

    Mix all three in a bowl- add ground pepper( as desired)

    Place Duck strips in marinade

    wrap onion,sweet pepper,portabella, and duck breast with a slice of bacon,

    Pin all together with wood tooth picks.

    place on the top grill shelf and slowly cook until the bacon is crispy.

    Remove and let it cool to the touch

    You now have one of the finest tasting duck strips/appetizers around.

    That one sounds good, I may have to try it. I like to marinade mine in Jamaican or Caribbean jerk marinade and then grill – even the kids love ’em.
