Pan Fried Perch

    I couldnt not share this recipe with you folks because in my mind, there is no better eating fish than Perch, and this is my way of big smiles and a full stomache!

    2 Cups Flour
    3 tbs Dill
    2 tbs seasoning salt
    3 tbs of onion powder
    Add it all to a zip-lok baggy.

    Crack 2 eggs and use whites only into a bowl.
    add one small squeeze of celantro paste.

    Drop your perch fillets into the bowl, and then take them out and drop them into the flour bag mixture.

    Now just fry them in a pan of butter or oil.
    I like butter but oil works fine!

    hmmmm … dill and cilantro.
    sounds interesting and good.
    will have to give it a try on some ice gills and crappies, since i catch 1 perch about every 2 years down here.

    My favorite fish covering is shore lunch corn bread version. Follow the instructions on the box and a little salt and pepper. My family of 5 destroyed 30 perch fillets just the night before last. MMMMMmmmm.

    Sounds awesome!

    When breading and frying, if you ever want to get a little crispier breading, using half flour/half corn starch instead of all flour.
