Tequilaberry’s Salad

    This salad is fantastic. Here is the original recipe.

    Ingredients
    2 heads lettuce, chopped (or 2 1-lb bags pre-cut lettuce)
    1 head cauliflower, cut up in tiny pieces
    1 lb bacon, fried and crumbled
    1 cup Hellmann’s mayonnaise (no substitutions)
    2 1/2 tablespoons white vinegar
    1/4 cup sugar
    1-1 1/2 cup parmesan cheese

    Directions
    1)Combine lettuce, cauliflower and bacon.
    2)Mix mayonnaise, vinegar and sugar.
    3)Add dressing to salad, add parmesan cheese. Serve immediately.
    mix together just before serving.

    I modified the recipe a little.

    Ingredients
    1 head of lettuce, chopped
    1 head of romaine lettuce chopped
    1 head cauliflower, cut up in tiny pieces
    1 lb bacon, fried and crumbled
    1 cup Hellmann’s mayonnaise (no substitutions)
    2 1/2 tablespoons white vinegar
    1/4 cup sugar
    2 cups grated parmesan cheese

    Directions
    1)Combine lettuce, cauliflower and bacon.
    2)Mix mayonnaise, vinegar and sugar.
    3)Add dressing to salad, add parmesan cheese.
    4)Refrigerate for 2 hours, stir well before serving.

    We have used Tequilaberry Salad for years. I am not sure if your recipe is the exact same as ours but looks very close. I believe it came from the restaurant Tequilaberry’s Prime rib house if I am not mistaken. Are there still any around? We had went years ago to one in the northern suburbs of the Twin Cities … I think?

    Tequilaberry’s in Coon Rapids has been gone for a few years now. The Vineyard, which is somehow tied to Tequilaberry’s, is still open in Anoka. However, it looks like it is closing at the end of the month.
