This one reminds me of the one they serve at Outback Steak House. The sauce would also be good on a grilled steak or burger!
GRILLED JACK DANIELS SALMON
INGREDIENTS:
2 Salmon fillets
½ cup Jack Daniels Whiskey
½ cup brown sugar
¼ cup soy sauce
2 Tablespoons honey
½ tsp ground ginger
Salt and pepper to taste
Aluminum foil
DIRECTIONS:
Preheat grill (I use charcoal but gas will work). Meanwhile, in a small saucepan combine Jack, brown sugar, soy sauce, honey, and ginger. Bring to a boil. Reduce heat to medium continually stirring until liquid in thickened and caramelized. Remove from heat. Salt and pepper the salmon to taste. With the foil, create a platter by folding all four sides forming a ½ “ lip. I double the foil to make it a bit thicker and sturdier. Place the fillets skin side down on foil and grill on low setting (indirect for charcoal). Brush on Jack sauce to cover the fillets. Cook about 7 minutes. Flip the salmon fillets (the skin should stick to the foil platter). Baste the fillets every three minutes until the fillets are cooked thoroughly (about 15 minutes or until the salmon has a light pink color in the middle).
