Ingredients:
In a Large Bowl, Combine:
1# Blue Crab Meat,
1 Cup of Dense White Bread, Crusts Removed, Small Dice
1/2 of a ripe Avocado, Small Dice
2 Tbls Minced Red Onion
In a Separate Bowl, Combine:
1/2 Cup Mayonnaise
1 Egg
1 Tbls Dry Mustard
1 Tsp Paprika
1/4 Tsp Tabasco Pepper Sauce
1 Tsp Worcestershire Sauce
Salt and Pepper to taste
Cover a Small Plate in Japanese Bread Crumb (for crusting).
Preparation:
To make the cakes:
Pour the wet mixture over the dry mixture (a small amount at a time) while mixing, until just lightly sticky.
Form the mixture into cakes, then, press lightly into japanese bread crumbs.
Sauté in a small amount of olive oil until golden brown.
For the Wasabi Mayonnaise, combine:
1 Tbsp Prepared Wasabi Horseradish
1 Tsp Crushed Red Chili Paste
1/2 Cup Mayonnaise
