Tasso???

    Found a recipe that needs Tasso. I don’t even know what that is. Where can I buy it?

    Spicy pork. You can make your own with a shoulder cut into strips and seasoned with cayenne, garlic powder, onion powder, salt, black pepper, white pepper, paprika (hot), and some brown sugar if you want it a little sweet too.

    Rub all that on it, wrap it up and put it in the fridge for 3 days. Pull it out and smoke it.

    After its been smoked, you chill it and then cube it up. Its great in a lot of cajun recipes.

    3 Tbsp Kosher Salt
    2 Tsp Cayenne or To Taste (see above)
    4 Tbsp Paprika
    2 Tbsp Fresh Garlic, minced
    2 Tbsp Coarsely Ground Black Pepper
    1 tsp Cinnamon
    1 Tbsp White Pepper
    1 Tbsp Brown Sugar

    Tasso is a type of spicy ham. Can sub capicola for it if you have trouble finding it.

    fatty ham, and can use it rendered down with some seasonings in your red beans with rice recipie. Use some chopped raw bacon and some fatty end pieces of a good ham along with some “Slap Your Mama” seasonings,cook down, then add your celery, onions, and garlic. Make a double batch and freeze half, it is a easy left over meal. I can now get Slap Your Mama at a local grocery store rather than going the mail option.
