Buffalo or Bison meat

    Anyone try buffalo or bison meat, burgers, roast,steak. How is the flavor? any tricks to cooking it? Looking at buying a 1/2 buffalo.

    One of the healthiest meats around. Very lean and low in cholesterol. Best to marinate and slow cook for taste and tenderness although cooking a certain cut that is similar to a cut of beef also turns out well. There is usually very little fat marbling, so meat can be dry. Google Bison recipes for some more detailed prep options.

    We have only eaten buffalo that are grazing the northern plains without supplemental feed. We always shot cows, some were very old, all were tasty. Mid Winter killed buffalo are too lean and are tough. Unlike venison fat, you can grind buffalo fat into the burger, it helps the moisture and flavor. We like it a lot.

    I’ve never had the pleasure of catching a bison through the ice.
