Smoked Thanksgiving Turkey

    Going in the smoker at 10: Its a big hit!

    1 large turkey
    1/2 cup minced onion
    1/8 cup minced garlic
    1 Tbs. minced rosemary
    1 Tbs. fresh black pepper
    2 Teas. paprika
    1 Teas salt
    1/3 cup olive oil
    2 large onions quartered
    1 rosemary branch whole

    Mix everything up to and including the olive oil in a small bowl creating a thick paste.

    Clean turkey and prepare breast up. With a pairing knife make incisions straight down into the meat to the bone, about 1.5 inches long. Do this all over the turkey. Stuff these incisions with the paste, also stuff under the skin.

    Quartered onion and rosemary branch get stuffed into cavity.

    Coat the outside with olive oil and sprinkle with paprika. Tie legs with string.

    Place in smoker and smoke as usual, maybe 4-5 hours until done.

    Sit back and chow while everyone tells you this is the best turkey they ever ate.

    The in laws are the out laws

    My wife is making a roasted bird so we have 2 too choose from. That should help keep the out laws in check for a little while, assuming the Korbel isn’t flowing by noon
