serves 12 or more
5 cups cut up cooked or canned chicken I use fresh boiled chicken
2 tablespoons vegetable oil
2 tablespoons orange juice
2 tablespoons vinegar
½ teaspoon salt
In a large bowl, combine above ingredients, cover and refrigerate overnight.
3 cups cooked macaroni rings (or Rosamarina noodles)
1 ½ cups green grapes or bing cherries
1 ½ cups thinly sliced celery
1 cup pineapple tidbits – drained
1 cup mandarin oranges – drained
1 ½ cups mayo
1 small container whipping cream
½ C. powered sugar
Whip the whipping cream with powdered sugar. Mix all the ingredients together (except the whipped cream) and toss gently. Fold in whipped cream. Just before serving add 1 cup chopped walnuts or cashews.
I don’t measure the celery, or most other ingredients – I use:
1 box of Rosamaria noodles
2 sm. cans mandarin oranges
1 can pineapple tidbits
4 cans of chicken breast (you know – the cans of chicken – like tuna cans…)
