citrus pork kabobs

    I hit a grocery store this morning to find something for our dinner. Lucky me, they had boneless pork country style ribs on sale. I dug thru about twenty packages and found one that had some real lean meat. As soon as they made it to my counter top they got cut into pieces about 3/4″ thick and then got a liberal sprinkling of my pet pork rub….Zatarains Creole rub. Then the pork hit the fridge.

    About 4 this afternoon I mixed 1 cup of Orange Marmalade and a cup of barbeque sauce together and heated it in the microwave just long enough to loosen up the marmalade enough to stir and mix easily. The grill was started and when the coals were white the skewers of meat alternated with mushrooms went on the grate. I grill these about 5 minutes and turn, doing this maybe six times, but ladling the barbque sauce mix on after the fifth turn of the meat.

    Ma whipped up a pack Thai rice dinner to go along with the pork and I opened a jar of sweet pickle slices that have some red pepper in them for zing. A tall glass of ice cold milk to wash things down made this a complete meal. The Zatarains has a bit of bite to it and this is sort of a Carib type of meal and the cirtus barbeque finishes the meat off in a great way….sweet, but heat.

    A guy has to eat too Mike.

    You should be up to your neck in frogs in a day or so.
