Got a old gas grill on our deck that Im thinking about turning into a smoker. The burners rusted out of it so was going to try running charcoal in it for smoking. Thinking I just need to rig up something to hold the charcoal and then something else for the smoking chips. Any pointers for trying something like this? Never really tried smoking before but seems like something to do this summer.

Not sure about the conversion, but you’ll enjoy the smoking! slow cooked ribs, brisket etc… great way to BBQ!

Tried some ribs real quick on the grill last night. Didnt turn out so well. Still think my jaw hurts from chewing. Thats what got me thinking about the smoker.

I’ve had ribs on the grill for up to 6 hours. I’m heading out but I’ll PM you some easy tips later on.

“ribs” and “real quick” should never be in the same sentence when pertaining to cooking. Eating, yes. But not cooking.

    Anything is possible.

My uncle gave me a smoker made from an old dishwasher (all stainless insides) – rotisserie ready and all. Works good.

Mike, I’ve added the smoke flavor using our regular grill by soaking some apple wood in water over night, then wrapping it in aluminum foil.

Poked small holes in the foil, then tossed on the gill grate.

Works very well and when done (after ensuring the wood isn’t smoldering) just toss into the garbage. Keeps the mess down!

Ps I agree. If I don’t have a minimum of 4 hours to grill ribs, we have chicken.

I converted one using a single electric hot plate. They are dirt cheap. It would get hot enough to smoke wood in a pan and provide the necessary temp. Works so slick I still use it. Would only hold temp in warm weather unless I covered with blankets.

Mike, no such thing as quick grilled ribs, what you can do is dry rub em or whatever seasoning you like and wrap them in aluminum foil and bake them at 250 the night before. Maybe a couple hours or so. Then grill them the next day indirect for your smokey flavor. Very tender and juicy!
