4 Tbps Butter
1/2 Cup each Onions and Celery diced-medium
1/4 Cup + 2 Tbsp All Purpose Flour
2 Cups Hot Water
2 Tbsps Minor’s Fish Base
1 Cup Potatoes diced-medium
1 Cup Milk
Dash of white pepper (black if you don’t have white)
And, as much chunked up walleye that you want. It calls for 1 Cup, but I usually load it up pretty good.
**I also take the time to remove any dark flesh off the fillets before chunking, so no one bites into any “fishy” tasting bites.
In a 3QT saucepan, melt butter over medium heat.
Add onions and celery, saute/stir until tender apx. 10 minutes.
Whisk in flour until well blended and evenly cooked. 2-3 min.
Remove from heat.
Stir in water, base, potatoes, milk and pepper. Heat to boiling, stirring constantly. (I dissolve the base in the hot water before adding at this point)
Boil/Stir 1 min.
Reduce heat; simmer 7-10 min., stirring often, until potatoes are tender.
Add walleye, mixing well. Simmer 5 min. longer; stirring often.
Serve hot….enjoy!
