Does anyone have a recipe for baked fish? Saw something on Due North that sounded good, But can’t find the recipe. It was fillets then she shook on some Soy sauce and Red pepper flakes. What else goes with it and what temp.? I hate when they do that.

We recently tried a good baked recipe that was very simple and tasty.
Marinate fillets in creamy italian dressing for 1/2 hour.
Roll each piece in crushed potato chips and bake.
Time depends on how thick the fillets are. We have done halibut steaks and crappie fillets. 375 for 15 to 25 minutes.January 26, 2013 at 7:16 pm #1134961Panfish Parmesan is great too. Moisten fillets in milk and dredge in mixture of fine bread crumbs, grated Parmesan cheese, and black pepper and bake on a cookie sheet at 400 for 15 or 20 minutes or until they brown up. Light and tasty!

Couple whole fresh walleye fillets, 15 – 18 inch fish work best
1-2 T butter
Salt and pepper
Dill
Lemon thinly slicedHeat butter in pan on med heat. Make sure that you don’t heat to high, you don’t want the butter to brown. Add fillets skin side down. Add salt, pepper, and dill to the tops of the fillet. Spoon melted butter over the fillet. The thin layer of butter seals the meat and helps it cook better. Add the lemon slices to the top of the fillets. After 5 minutes cover with a lid and reduce heat to super duper low. Cook until the fish is opaque but not flaking…usually another 3-4 minutes. Turn heat off and let it rest in the warm covered pan a couple more minutes. The whole cook time should not be more than 10 minutes or so. Serve on rice with a nice veggie.
I like this recipe because the sauté in butter creates a nice crust on the bottom of the fillet. It is also relatively healthy, almost all the butter stays in the pan. Personally I don’t like to over season or over cook walleye. They taste just fine the way they are.

Thanks.ParnowPosts: 13January 26, 2013 at 10:45 pm #1134995Put aluminum foil on a baking sheet. Put your fish of choice on foil, cover with Italian dressing, and grate fresh parmesan on top. Bake 400 for roughly 15 minutes, time all depends on size and number of filets

slather your fillets with a thin coating of real mayo
add lemon pepper and parm cheese to panko bread crumbs
roll fillets in breading
put on foil lined cookie sheet
5 or 6 min per side
the mayo melts out and keeps the fillet moist with a crunchy coatingJanuary 28, 2013 at 7:40 pm #1135608OK scratch the baked part and broil. I like to take my walleye and or sauger and dry off with a paper towel. Melt in a coffee cup, a couple tablespoons of butter and a shot of olive oil. Once melted add your favorite seasoning. I like garlic powder, ground cummin and coriander stir mixture. Paint your fillets with the fortified butter and broil. Check in 3-4 minutes, maybe an extra minute or two. Once they flake easily they are done, a little salt and pepper after removal from the broiler. Serve with some nice bread and a green veggie. Ummm might make some tonight.
