    I use chicken thighs but any cut from the chicken is good. I heavily flour the chicken and fry under medium heat and fry it long enough so the chicken gets good a crisp on both sides, even crisper is better. Pour off the cooking oil and add a can of golden cream of mushroom soup mixed with equal part of water. Mix the soup mixture into the pan that holds the fried chicken. I add one whole large onion and chop coarsely for texture when cooking. You can add some sliced mushrooms and thats even better. Put the lid back on the frying pan and let it cook under low heat for an hour until done.

    Pull the chicken out and leave the gravy for going over baked red potatoes. Take the baked potatoes and slice open several ways and put two big chunks of real butter over the potatoes and then the onion and mushroom gravy over the top of that. Were haveing brocolli as a vegetable soaked in butter too, Died and gone to heaven type of food, really good, cheap and easy to make. …Enjoy…

    Thinking along the same lines tonight there Mossy.

    I gave the FW almost the night off and ordered a rotissary chicken from Jordan Meats here in Lakeland.

    I’m not sure of the seasoning on the outside, but they must inject them because there’s a slight lemon hint to the meat. They’ve been getting so popular, I have to call ahead to reserve one!

    Good ol’ Jeffers with my dinner! LOL!

    That’s the rotisserie skewer.

    It was good and the left overs are pulled and ranch dressing added for a sandwich and a half at noon tomorrow.

    Similar quick recipe, but with Brocolli Cheese soup. I’ve also been thinking about adding some beer to the sauce to give it a Beer Cheese Soup flavor.

    BROCCOLI-CHICKEN CASSEROLE

    4 Half Chicken Breasts
    1 can Broccoli-Cheese Soup
    1 sm. can Spinach, drained (or about 1/2 of 15 oz. can)
    1 med. Onion cut in rings
    1 Tblsp Brown Mustard

    Brown chicken till done – adding onions to pan when
    chicken is nearly done. Mix soup, spinach and mustard
    together and pour over chicken and simmer, or place chicken in casserole and cover with mixture and heat in microwave. Serve with baked potato, noodles or rice.
