    The best jambalaya is made with no recipe! Just wing it, make it your own, and I promise it will turn out great.

    Throw some butter in a pan, add in some diced onion, peppers, celery, and garlic. Cook until they just start to sweat. Throw in some diced sausage, andouillie is best but a nice italian or hot n spicy will work also. Cook until the sausage gets browned up a bit. The veggies should be done by now. Throw in some diced up chicken breast (or shredded leftover chicken) and cook real quick until its done. It wont take but a couple minutes. Throw in some herbs to your taste, basil and parsley are great. Add 2 cups or so of parboiled or instant long grain white rice and about 2 cups of tomato sauce, and about 2 cups of chicken stock. Now you can flavor it how you like. Salt, pepper, some hot sauce.. anything else you want. Some red pepper flakes are good if you like it spicy.

    Boil it, then turn it down to simmer until rice is cooked… usually around 20-25 minutes.

    Stir, and serve.

    Fresh ingredients are always best, but there are no rules here.. make it your own, do your thing.. that is what cooking is all about.

    Thats what I do with one exception. I’ll do mine in a dutch oven. After I saute and brown everything and add all the liquids and what not I bring it to a simmer then throw it into a 325 degree oven stirring occasionally while cooking.
    With the oven I feel I get an even heat throughout the pot.

    Sky is a limit with this method, burner or oven, always turns out great. Don’t forget the mushrooms.

    X2 for the oven. I fry it up in the Wok and then throw it in the oven till the Misses get’s home.
