Crappie Chowder made easy.

    Fast and easy recipe.

    ingredients;

    3tabelspoons of butter

    3tabelspoobs of flour

    salt and pepper

    red peeper flakes for a heat of a bite

    2 carrots

    1 stalk of celery

    1 pound of mushrooms quartered not sliced, sounds like a lot but I love mushrooms

    1 onion

    4 minced garlic cloves

    1 can of chicken broth

    6 cups of milk

    Old bay seasoning to taste I use a teaspoon

    teaspoon of chipotle powder

    Crappie fillets cut into 1 1/2 chunks quantity is up to you

    Start sauteing the carrots and celery until almost soft in 1oz off butter then add the onions rest of the butter, salt and pepper,pepper flakes saute until onions are translucent.

    Add the garlic old bay and chipotle powder cook 30 sec

    Add the flour to make a roux cook while stirring for 2,3 minutes

    I saute the mushrooms in a different pan then add them after the roux is done.

    Add chicken broth and the milk

    Bring to a simmer for 5 minnutes

    Add salt to taste

    Add crappie simmer 2 minutes (they cook fast so watch them closely so not to overcook) then remove from heat The crappie will continue to cook.

    I like the texture contrast and flavor the mushrooms add to the dish

    Now eat.

    Mmm, I bet this would be good with northern, instead of crappie. I had pike for the first time in a long time the other day. i liked how firm it was. I liked it so much I think I’ll be keeping some small pike from now on when I fish. And keeping small pike, if a lot of people did it, would be good for the ecology I bet. Even on a small pike, you get a decent amount of meat.

    That was my plan also. 1 23 inch northern should be all you need for some good Eats.

    Just made this, excellent! Substituted Tony Cacheres creole seasoning for chipotle powder, and used dried morels for the mushrooms. Great recipe.
