Chicken and charcoal

    If anyones looking for a simple good way to charcoal a chicken try this one, its simple and tastes delecious.

    My tastebuds were calling for charcoaled chicken last night so I cut a whole chicken in half.

    I rubbed both halves down with garlic powder, celery powder, onion powder and Lawreys seasoning salt. I put it about 3″ over hot charcoals, ribcage side down and cooked it completey through until done. Then I flipped it over until I got the crust on the skin I wanted.

    I put both halves on a plate and when I got it in the house you could pull the bone right out of the leg and man did it hit the spot with the tastebuds. Cooking it ribcage down is a safe way so as not to burn it. Its simple to make and really good with some potato or macaroni salad or cole slaw. So if your looking for a simple way to charcoal chicken this is a good one.

    next time try to brine the bird, you will amaze yourself even more. Sea salt, cracked peppercorns, bay leaves or old bay seasoning, sugar. Boil till disolved, let cool, add ice and chicken and leave in there for a few hours. Then do exactly as you described. Thanks, now I’m going to have to do this…soon.
