Onion Rings

    I had a craving for onion rings last yesterday, so I decided to make up some of my own. I settled on a Paula Dean recipe. Basically, I soaked the onion rings in seasoned buttermilk, dredged in a seasoned flour/corn meal mixture, then fried. They were pretty good. Not the best I have ever had, but it definitely satisfied my craving.

    Rather than stink up my house, I decided to fry in a cast iron dutch oven on a camp stove outside. It worked out really well. 350 degree oil for a few minutes. Dipped in horseradish…yum!

    The ol’ white gas Coleman puts out a ton of BTU’s.. rings look great.

    I’ve never figured out how to make OR’s look like restaurant style – perfectly coated in a batter made of something we probably down’t want to know about…..

    I like to use 1 cup of Bisquick, 1 cup of corn starcth, 1 T vanilla and a dash of onion powder, enough beer to make a batter that just barely hangs on to a fork. Beer has to be stale or it will fly off when the rings are put in the oil. Take rings from liquid used to soak in and shake in flour then dip in batter.

    A friend of my use rice flour and buttermilk. He always has his oinons in ice water too!!! It all look’s good
