    I just got lucky and got some fresh salmon from a guy I’m working for, Daves a nice guy. Beings I got enough to make a few diffrent dishes I’m asking what your favorite recipie is, I’d like to try a few anyway, whats yours?,,, thanks in advance.

    Besides smoking it, cooking it is pretty easy – on the grill, in tinfoil in the oven, on the skillet, whatever.. just had some at my mom’s the other day and she made a dill/butter sauce that was great on top of it.

    This one is just plain awesome and really simple:

    Bacon Wrapped Grilled Salmon Filets

    Use 2 small salmon filets or cut 1 large filet into halves
    � filets should be skinned. Remove the reddish-gray fat from the skinned side.

    � The lateral bones (pin bones) should be removed with a pliers or sliced out with a knife so that the filet is totally boneless

    1. You will need to use a fish-grilling basket. Spray the basket with Pam to avoid sticking.

    2. Lay down a layer of bacon cross ways on one side of the grilling basket. You will need enough strips to cover the length of the filets.

    3. Next rub the filets with olive oil (vegetable oil can be substituted). The filets should be seasoned with a seasoning salt (I prefer Morton?s).

    4. Place one filet on top of the bacon strips.

    5. Next place a layer of finely sliced onion (1/8?) on the filet, then a layer of finely sliced tomato (1/8?), and then a layer of finely sliced green pepper (1/8?) (cut into rings). We also do Orange, Red peppers

    6. Next place some grated Parmesan cheese on top of the veggies. (you can substitute cream cheese with jalopena slices for a spicier treat)

    7. Then place the other filet on top.

    8. Then pull the bacon strips over so both filets are wrapped. (You may need a second layer of bacon on the bottom and one on top if the filet is more than 4? wide).

    9. The grill should be heated indirectly (coals on either side and a drip pan below the grilling basket). Cover and cook for 20 minutes or until the bacon is crisp and then turn the basket over and cook for another 20 minutes or until the bacon is brown and crispy. There is no way that you can overcook the fish, the filets stay very moist with bacon on the outside and the veggies inside.

    Make a mixture of 50% Kikoman Soy Sauce and 50% pure maple syrup in a dish. Grill the salmon fillets and brush this mixture on generously while grilling.

    When tired of grilled salmon, cut into small chunks,dip in beer batter and into 375 degree oil. Tough to go back to grilled.

    Simple? Huh? 40 minutes?

    If someone attempts to make the bacon/salmon recipe, please post pictures.

    Try this-
    3 tablespoon brown sugar
    1tablespoon honey
    1/4 cup Dijon
    2 tablespoons soy sauce
    1 tablespoon ginger
    Mix in bowl lightly spread on filets for 20 min
    Preheat grill
    Put filets on med heat for 20 minutes or until flesh hits 135

    Marinate in teryaki and grill skin side down, I don’t even flip it over. Is that easy enough??

    I put a little olive oil and some lemon pepper on them right after lighting the charcoal grill. Let them sit then when grill is ready cook them about 5 – 10 minutes depending on thickness of fillets. Simple and delicious. The McCormick Lemon Pepper grinder works great for this. Getting hungry now for Friday nights dinner – Salmon and Shrimp on the barbie.

    Grilled plank salmon! It is our favorite dish at the house. If you have not tried it, you must. There is a bunch of info on the web.

    Here are a couple tips.
    – Put some dry rub or seasoning on it.
    – Oil the smooth side of plank before putting the fish on
    – Keep a water bottle handy for when the board actually starts burning, not smoking. If you get flames that is fine. The flames will never go further than the edge of the salmon and it actually makes a nice crust once it burns to the edge.
    – No time to soak the wood? Just wrap the bottom and edges with tin foil.

    Here’s some pictures I took. I know they look overdone, but I assure you they are very moist inside. I may have cooked them a little longer than I like, but it is very hard to over cook them this way.

    Plank is also great for halibut (I think it is almost sale season for this expensive fish), swordfish and cobia.

    Some solid ideas. I believe simple is best. A quick dry rub (including coriander, dill, sugar, a dried herb like thyme and/or rosemary). Cook it on the cold side and put a chunk of cherry wood on your coals. Get the internal temp up to 120. Move to hot side for a quick sear on the presentation side. Pull at 135. Tent and let rest for 10 mins.

    This one is a favorite of ours

    Slice up some green peppers and pineapple and put them on top of the salmon. Sprinkle brown sugar on top of that. Wrap in tin foil and bake for about 20 min.

    Serve it with wild rice and steamed asparagus and get ready for YOUR wife to drag you to the bedroom.

    soy sauce/sugar, minced garlic in saucepan simmer that slab to your liking(med/well) both sides.. asparagus with olive oil garlic sault in oven..whallah..Dinner.

    I had to work late tonight or Id have tried one of the above, BUT WHICH ONE LOL!!! they all sound good.
