    I save my lemon rinds when i make lemonade and let them freeze dry to use as zest.

    Yesterday, I said, why not put a 1/2 dozen lemon rind halves in the fish pot while it heats up…

    Turned out great. My 8yo daughter said “What did you DO to the fish daddy??”

    Just a hint of lemon in the fish. My lemon rinds are not going to last long…

    I put a small wedge in my jars of pickeled fish too.
