Anyone got a recipe for sheepshead or smallmouth? I catch enough of them on the river so I figure I might as well start eating them. Also, any recipes for any sucker-like fishes?

go ahead and eat the sheephead. Let the smallies go

In all seriousness, if you’re going to eat bass, the best size is the 14-16″ fish. anything larger than that and the meat tends to decrease in succulence exponentially with size….besides, its better to let the big breeders carry on the gene pool. The only time I ever had smallmouth it was just fried in a generic shore lunch style batter and tasted alright. I’ve heard sheephead is good smoked, too. Sorry, no recipes but google usually pops up a mind bogglingly long list of great ones.

Sheepies are fantastics just filleted and fried like you would a walleye. The meat is white and flaky if you don’t overcook it.

Suckers are good but bony. I’ve ground them and made fish patties that are great. Their flesh is sweet. I’ll have to see if I can dig up one of my fish patty recipes.

agree…I’ve eaten more redhorse and suckers than most people I’ve talked to..and the meat is excellent. Can’t speak to drum…but I can see them being just fine in fish cakes or ground patties. I’ve also heard that white bass are good eating too.

With the sheepshead, just fillet off the back above the lateral line. Also make sure you get rid of any dark meat on the skin side of the fillet.
They are also very good pickled.

    Here’s a very simple recipe.
    scale and gut sheephead
stuff it with mayo, your fave sausage, green onions and garlic.
    Wrap in foil and grill.
