I picked up a couple steelhead fillets on sale at Cub this week for our Friday Lenten dinner. Anyone have any good recipes?

try this oneAsian Sesame Salmon
Makes 8 servingsSpices:
2 tsp Toasted Sesame Seeds
1 tsp Minced Garlic
1 tsp Minced Onions
3/4 tsp Ground Ginger
1/2 tsp Crushed Red PepperIngriedents:
1/3 cup honey
1/3 cup thinly sliced green onions
2 tbsp. soy sauce
2 lbs salmon filletsDirections:
MIX honey, green onions, soy sauce and all of the Spices except Red Pepper in small bowl until well blended. Stir in Red Pepper to taste. Place salmon in 13×9-inch baking dish. Spoon honey mixture evenly over salmon.
ROAST salmon in preheated 375*F oven 20 minutes or until fish flakes easily with a fork, basting occasionally with honey mixtureMarch 1, 2012 at 1:16 pm #1044863With the steelhead I have brought home from Lake Michigan I melt butter pour it over the fillets, sprinkle some seasoning over them and toss them on the grill.
Grill skin side down 4-6 minutes depending on size of the fillet, flip to get some nice grill lines for 2 minutes or so then back over for 2-3 minutes…done. I just lay the fillets right on the grill, no tin foil. A little melted butter to brush on as you cook them is nice too.
If you decide to grill them….take them off when they look almost done, you don’t want to over cook them or they’ll dry out.
They don’t need to be 100% done all the way through and actually just a tiny bit rare in the middle is about perfect.
That is my favorite way to cook salmon and steelhead.
March 1, 2012 at 3:57 pm #1044931My favorite, similar to Mr. Walleyes, it’s an Asian inspired recipe I find quite enjoyable, here’s the recipe:
Ingredients
1 1/2 pounds salmon fillets
lemon pepper to taste
garlic powder to taste
salt to taste
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil
Directions
1.Season salmon fillets with lemon pepper, garlic powder, and salt.
2.In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
3.Preheat grill for medium heat.
4.Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.March 3, 2012 at 2:15 am #1045592Thanks, guys. I went with my standby salmon recipe, and they turned out great.
Toast 1 tsp whole cumin, 1 tsp whole coriander, 1/2 tsp fennel seed, and 1 tsp green peppercorns. Grind with mortar and pestle or coffee grinder. Rub the fish with olive oil, salt with kosher salt, then liberally season with the ground herbs (really pile it on and pat it down). Toss on an oiled grill till done.
