Walleye White Chili

    2 tsp Olive oil.
    1 med onion chopped.
    2 jalapenos minced.
    4 cloves garlic.
    8oz clam juice.
    3 cups chicken stock.
    1 can chopped green chiles.
    1tsp cumin.
    1tsp oregano.
    2# walleye cut into bite size pieces.
    2 cans Great Northern beans.
    Salt & pepper.
    1 tbsp butter.
    1 tbsp flour.

    Saute onions, jalapenos and garlic in olive oil till onions are transparent.
    Add green chiles, stock and spices.
    Simmer 20 min.
    Add walleye & beans, simmer 5 min.
    Mash flour and butter together and stir into chili to thicken.
    Simmer 5 min or till serving.

    I’m not much of a cook, but I think I will give this one a try. I am always looking for creative ways to cook fish.
