Wanted, Simple Dutch Oven Recipes

    Last year I started getting into dutch oven cooking while we are camping. I have a few go to recipes that I am posting below, but I am always looking for other idea of things to make. Anyone have any favorites they would like to share?

    Apple Crisp

    6 apples
    2 tsp cinnamon
    2 tsp nutmeg
    3 cup quick oats
    1 cup flour
    2 cup brown sugar
    1 tsp baking powder
    2 tsp salt
    1 cup butter

    Slice apples.
    Mix apple slices, cinnamon, and nutmeg in a bowl.
    Mix oats, flour, sugar, baking powder, salt, and butter to make crust.
    Press half the crust mix into the bottom and sides of the dutch oven.
    Pour the apples onto the crust.
    Cover apples with the rest of the crust mix.
    Bake covered about 45 minutes with 6 briquets under and 10 on top, until top crust is light brown and apples are tender.

    egg bake

    Dozen eggs
    2 C half & half
    1 C milk
    2 tsp salt
    1/4 tsp pepper
    2 tsp dry mustard
    1 tsp Worcestershire sauce
    1 lb diced cooked ham, crumbled bacon, what every you have
    2 C shredded cheddar cheese
    6 slices of bread, torn up

    Mix it all together and bake 50 minutes with 8 under, 16 on top

    Enchilada Casserole

    2 lbs. Ground beef (I use 50/50 pork to venison)
    1 tsp. Salt
    1 large onion, chopped
    1 can tomato soup
    2 cans enchilada mild sauce
    1/2 can water
    6 large corn tortillas, ripped into strips
    2 cup shredded cheese

    warm up the oven with 6 bottom, 12 top, once warm, set the lid to the side

    Brown hamburger, salt and onion in the dutch oven.
    Add remaining ingredients except for tortilla’s and cheese, stir and let simmer for a few minutes. Remove all but a 1/2 inch of it from the oven, sprinkle whats still in the oven with cheese and then cover it with a layer of ripped tortilla. Pour a layer of mix on it, sprinkle with cheese, cover with tortilla. You should get 3 layers and the top later should be the sauce/meat sprinkled with cheese, so all tortilla’s in completely covered. Put the lid back on and simmer it for about 20 minutes.

    How about the old Boy Scouts Peach Cobbler
    1 box white cake mix
    1 large can of Peaches syrup and all
    1/2 stick butter

    Pour the entire contents of the can (peaches and juice) into the dutch oven once it is hot.
    Dump the cake mix on top of the peaches.
    Slice the butter into sections and put them on top of the cake mix. Replace the lid and pile coals on it once more.

    While it’s not that simple, much of the prep can be done ahead of time so you’re ready to cook when you get there. Besides, dutch oven cooking is as much about the journey as it is the destination.

    Venison Roast –

    Get a few cold beers. Apply several to the cook, leaving one or two to warm (cold beer can crack a hot cast-iron dutch).

    Prep roast by plunging knife slits into the roast and putting minced garlic inside. Each side, as much garlic as you can stand, then liberally apply dry rub or seasoning if your choice. Get base of dutch oven good and hot. Take 1/2 lb of bacon cut in chunks and add to the hot dutch oven. When the bacon gets soft and translucent, sear roast on both sides.

    Add veggies of your choice. Definitely some onions, probably celery, peppers, more garlic and brown in bacon fat. Add two beers….darker is better if you like darker beers. Coals top and bottom, achieving a med-low heat, and let it ride for 3-4 hours. Add carrots and potatoes and let cook for another hour or so. Take it out of the coals and let it rest while the juices reacquire.

    Serve as a mish-mash stew with crusty bread. Good stuff!
