Venison snack sticks

    Just got a smoker for Christmas and thought I would try a very small batch of snack sticks. Does any one have any hints or recipes they would share?

    My old man has got the smoked, dried venny down to a science, stuff melts in your mouth, everyone loves it, I can’t slice it fast enuff for my 15 month old son Hunter, mom and sitter both claimed he won’t eat cuase he was sick, slice upsome and he couldn’t get it in fast enuff. Let me know if you want the recipe, super simple and keeps great!

    Looks good Bob! I been looking at the Bradley Smokers – they are not cheap I currently use a cheap charcoal smoker. It works awesome, but you need to keep tabs on it for temp regulation.

    Bob,

    I have been making venison snack sticks with the Cabela’s Terriyaki snack stick kit. It is 24.99 reg and goes on sale sometimes for 19.99. It comes with enough seasoning for 25lbs of meat and also with the casings.
    I make them in 25lb batches using the optional amount of pork that it lists on the package directions so they aren’t quite as dry.
    For smoking them, I have just been using a walk-in cement block smoker that is about 4ft by 4ft outside dimension. I just light a fire with dry maple on the floor and let it smoke away. It is difficult to regulate the temp with what I have to work with, so I completely ignore the smoking directions and just smoke them till they are done. For whatever reason the finished product turns out tasting not at all like terriyaki and more like what most places would call a mild snack stick. A little smoke flavor and a whole lot of deliciousness.

    I normally like to make stuff with more of my own recipe’s and experiment a little, but after the first time with the Cabelas kit I liked them and have been making them since! They also offer a few other flavors too like Pepporoni and Hot Sticks.

    Bob,
    How hot and long do you smoke your sticks at? I have tried different recipes and finally got some from my local butcher shop and they are a hit, plus I chop up jalapenos in them and can not make them fast enough.

    I smoke at 200deg until the meat thermometer reaches 156-165 degrees.

    Approximately how long does that take or should I say how many beers does it take?
