Same list for me as everyone, they all taste good. #1 Perch. #2 Walleye, Crappie, Sunfish, Northern, in any order.

One fish I haven’t seen mentioned on here yet that we catch a lot of while perch fishing…. Rock Bass. Anybody ever tried them? When fried, they taste like any other fish out there. Good filler for “large fish fries”. However I commonly use them for things like fish tacos, fish pizza, etc. Recipes where I want the healthy nutrition of the fish but don’t want to use a “quality fish.”

Rock Bass when caught through the ice are good. I’ve heard they are not as good when caught in the summer.

My all time favorite fish was bought from local Indians on Vancouver Island off the back of his truck fresh caught that morning. $10 Canadian for the small $14 for the large. We took the “small”. Grilled it out at our camp sight that night. Had many snacks after we smoked / grilled it. Fresh caught sockeye salmon grilled with fresh lemon squeezed onto. Yum. And I prefer not eating salmon because of certain smells it can aquire.

Well if we are now including clams and other mussels, then I’ll put raw oysters up near the top.

For me, depends on the lake and the time of season. High elevation lakes have just as good tasting trout as stream but low elevation lakes in summer the trout taste like mud.

All depends on the preparation and if a drop of lemon juice touches it – throw it in the garbage.

    1. Grilled – Mahi-mahi or swordfish with a dusting of cajun

    2. yellowfin tuna Ceviche (made without lemon juice)

    3. Smoked – male steelhead smoked with Hickory and Cherry and Garlic/dill brine

    4. Baked Tune Steaks

    5. Pan fried in butter – perch/gills

    6. Deepfried – walleyes

Truth be told, battered, fried and dipped in my favorite tartar sauce, I’d have a tough time distinguishing between any on my list.

No one mentioned channel catfish, so no body likes to eat mud.

Flathead, done right would surprise a lot of you. #1 on my list.
